... make lemon soup!
Our dwarf Meyer lemon tree is producing lemons like crazy right now, and today (while watching the stupid Vikings game, about which I cannot comment... too mad...) I made my favorite lemon soup.
The recipe is not complicated, one that I created myself. I make chicken broth from a store-bought rotissiere chicken, add a sauteed onion and the juice of enough lemons to make it taste as lemonny as I like. Today I think we used as many as 12 lemons, but the flavor of the lemons makes a huge difference in the flavor of the soup. Once the lemon juice is added, cook the soup for about 20 minutes to blend the flavors. The blend the soup in a blender or food processor in small batches until it is smooth. Add the kernels from 4 cobs of corn, and then about 8 ounces of uncooked pasta. Small pasta works best - I like little stars, but could only find rings today. Once the pasta is cooked, the soup is complete. And tasty!
This sounds great. Looks good too. I'm guessing store-bought lemons in Minnesota are not quite the same...
