Looking for a way to get your kids to eat any vegetable that isn't covered in ranch dressing? Try this recipe - it has the flavor of ranch but lets the sweet natural flavor of the vegetables shine through.
Roasted Ranch Root Vegetables
Ingredients:
- 2 tablespoons Ranch Mix (I used Robyn's View's Homemade Ranch Dressing Dry Mix)
- 2 pounds root vegetables (I used carrots and parsnips here)
- 1 tablespoon vegetable oil
Directions:
In a small bowl, mix the Ranch Mix with the vegetable oil.
Slice the vegetables into bite-sized pieces. Place the vegetables in a shallow pan (or in foil if you plan to use your grill).
Pour the Ranch Mix oil over the vegetables. And mix thoroughly to coat. (If using foil, seal the foil packet.)
Roast the vegetables at 400 degrees for about 30 minutes, or until they are soft and golden-brown at the edges.
This is a delicious way to get in your vegetables. Roasting the carrots and parsnips brings out their natural sweetness, and the ranch flavoring adds a fresh and herb-y taste. Even The Children liked it!
Roasted veggies are my favorite. And yours look good--never thought of using a seasoning packet before!
