Peach Lambic Sorbet

We are still in the middle of ice cream season here in San Diego,  Okay, when isn't it ice cream season, really?

But it is also tailgating season, and tailgating means grilling and beer.

How do those go together?  Peach Lambic Sorbet!  Lambic is a sour beer made in Belgium, that is generally fruit flavored.  Lambic has strong flavors, and is both sweet and sour.  Though it is most definitely a beer, it is also much more fruit-flavored than you generally get in a fruit beer.  So worth trying.  (Something to remember for Christmas - Frambois, which is raspberry lambic, makes a wonderful Christmas dinner beverage)




Peach Lambic Sorbet

Ingredients:
  • 1 pound fresh peaches
  • 3/4 cup sugar
  • 1/3 cup light corn syrup
  • 3/4 cup peach lambic beer, chilled


Directions:




Remove the pits from the peaches, peel, chop and puree in a food processor or blender until smooth.



Combine pureed peaches, sugar, and corn syrup in a medium saucepan.  Place over medium heat and bring to a simmer, stirring to disolve the sugar.  Once sugar is dissolved, remove pan from heat immediately and put in the refridgerator to chill for at least 2 hours.  (To speed up this step, you can add the mixture to a plastic freezer bag and put it in the freezer with ice packs around it)



Once chilled, add beer and chill throughouly (you can skip this step if your beer was well chilled).   And as long as you've opened the bottle, you may as well pour yourself a little.





Pour base into an ice cream maker and freeze according to the manufacturer’s instructions.






Place plastic wrap over sorbet (to prevent ice crystals) and freeze until firm, at least 4 hours.

Serve!






This was really delicious!  I thought it was surprisingly light and cream, particularly for sorbet.  And it was sweet and fruity, with just a hint of lambic flavor.  Yum!  I'm looking forward to trying some other flavors!
