Orange Creamsicle Cookies


When you can't quite catch the ice cream man, these Orange Creamsicle Cookies, with fresh orange flavor and creamy white chocolate chips will satisfy your creamsicle craving!




I love cake mix cookies - they take no time to make and they are super-tasty!


I always have a couple of boxes of cake mix around for cookies.  And in the summer, these are some of my favorites!


Orange Creamsicle Cookies

Prep Time: 15 minutes
Cook Time: 10 - 12 minutes
Ingredients (3 dozen)
  • 1 box white or vanilla cake mix
  • 2 eggs
  • 1/2 cup butter
  • 1 tablespoon orange zest
  • 2 tablespoons orange juice
  • 1 package white chocolate chips
  • 1/2 cup confectioners sugar
Instructions
Using a stand mixer, mix the butter and cake mix together. Add the eggs, orange zest and orange juice and mix until blended. Stir in the white chocolate chips.
Spread confectioners sugar onto a piece of parchment paper. Drop by teaspoonfuls onto the parchment paper and roll into balls. The dough will be soft, so work gently.
Place the balls onto a silpat-lined cookie sheet and press down slightly. Bake at 350 degrees for 10-12 minutes.
They are done when the cookies are just set and the edges are golden brown. You will need to be careful as you remove the cookies from the cookie sheet - they will be quite soft.
Don't worry - when they cool, they are crisp on the outside and tender on the inside.
