An Omelet with Fruit?

Why not?  Makes sense when you think about it... eggs and fruit. Custards are egg-based. French toast with no bread...

Strawberry-Banana Omelet
1/2 c sliced strawberries
1/2 small banana
1/2 c egg beaters
2 T Weight Watchers cream cheese
1/2 T skim milk
1/2 tsp vanilla (divided into quarters)
2 tsp splenda (divided)

Mix 1/4 tsp vanilla with egg beaters and 1 tsp of splenda. Pour onto hot skillet (I used a flat griddle pan so the egg would be really thin). 

Mix together 1/4 tsp vanilla with cream cheese, milk, and remaining splenda. Pour cream cheese mixture onto cooked egg, top with sliced strawberries and sliced banana. Fold the egg around the filling, remove from skillet, and Voila! Yum!
