Pepperoni Pizza Quesadillas



We love pizza in our house.  When we want pizza with little prep, cooking or cleanup, we make these Pepperoni Pizza Quesadillas.  They can be made in no time, and you can use any ingredients you like.  We make them {a little} healthier by using part-skim mozzarella, and we leave out the meat for The Girl's servings {she's vegetarian}.


Pepperoni Pizza Quesadillas

Ingredients:


  • 8 flour tortillas
  • 8 ounces of shredded mozzarella cheese
  • 1/3 lb pepperoni (we used mini-pepperoni slices so the quesadillas would cut easily)
  • 1 16-ounce jar of pizza sauce



Directions:


Brush each tortilla with a thin layer of pizza sauce.





Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired.





Sprinkle with another layer of cheese and place the other tortilla on top (sauce side in).






Pre-heat a medium cast-iron skilled over medium heat.  {We have a quesadilla maker which is just perfect for this recipe, but any heavy-bottomed skillet will work as well.}

Lay quesadilla in the pan and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.





Slice into quarters and serve with a little bowl of pizza dipping sauce.



Crispy crust, melty cheese, pepperoni bites and tasty sauce make this perfect for a quick pizza fix.  You could even make this on the grill (using aluminum foil instead of a skillet) for a fantastic tailgate treat!
