It's cranberry time! I love cranberries - they are versatile and have a great flavor. I've been looking forward to seeing fresh cranberries in the store for so long... and I've got a stack of recipes I want to make. The first one is Kicked-up Cranberry Jam. It's a very simple recipe, with tons of flavor and a bit of a kick to top it off!
Kicked-up Cranberry Jam
Ingredients:
3 1/2 cups fresh cranberries
1 cup water
1 cup sugar
1 jalapeno pepper, finely chopped
Directions:
Rinse and drain cranberries. Bring water to a boil in a medium saucepan. Lower heat to medium, add cranberries, sugar, and jalapeno and simmer until skins pop and mixture thickens, about 15 minutes. Transfer to bowl to cool. Refrigerate in an airtight container for up to 2 weeks.
This is a delicious spicy sauce you can use with poultry or with beef, or even on toast for an eye-opening breakfast!
