Pumpkin and Bacon Twists



Today is Crazy Ingredient Challenge Day! CIC is the headed up by Dawn at Spatula’s On Parade - this is one group of talented chefs who come up with these recipes each month, made with, well, crazy ingredients! 



Pumpkin and bacon are the ingredients for this month. I think these are fantastic ingredients - both alone and together. Both work wonderfully in either sweet or savory dishes, leaving the field of potential recipe ideas wide open. I thought about soup, or pie... maybe truffles. With so many options, I had a hard time deciding. 

Then it came to me - when we were travelling over the summer, we spent a weekend in a fantastic bed and breakfast. The proprietor made puff pastry bacon twists that were amazing. I thought that adding a pumpkin filling would make them even better. And you know what? Pumpkin did make them even better!

These Pumpkin Bacon Twists are the perfect balance of sweet and savory, with a silky rich and spiced filling and just a bit of heat.


Parchment paper keeps the pastry from sticking to the baking sheet and also makes for easier cleanup. If you don't have parchment paper, you can spray the baking sheet with cooking spray instead. However, cooking spray may cause the bottoms of the pastries to brown more quickly, so watch the pastries carefully!


These would be great for a brunch party. To make ahead, cover and freeze the unbaked pastries on the baking sheets until firm. Remove the pastries from the baking sheets and store in a gallon-size resealable plastic bag in the freezer for up to 1 month. To bake, place the pastries onto baking sheets and bake as directed above.

Pumpkin Bacon Twists

Prep Time: 15 minutes
Cook Time: 12 minutes
Ingredients (18 twists)
  • 1/3 cup packed light brown sugar
  • 1/2 cup pumpkin puree
  • 2 teaspoons pumpkion pie spice
  • 1 teaspoon cayenne pepper
  • 1 puff pastry sheet, thawed
  • 5 slices uncooked bacon
Instructions

  1. Heat the oven to 400°F. Line 2 baking sheets with parchment paper.
  2. Combine the brown sugar, pumpkin pie spice and cayenne pepper in a small bowl.
  3. Sprinkle two tablespoons of the brown sugar mixture onto your work surface. Unfold the pastry sheet on the work surface.
  4. Add the pumpkin puree to the remaining brown sugar mixture and stir to combine.
  5. Roll the pastry sheet into a 14x10-inch rectangle. Spread the pumkin mixture onto the pastry. Fold the pastry sheet in half lengthwise. Cut crosswise into 18 strips.
  6. Cut the bacon slices in half lengthwise, then crosswise, making 20 (about 5x1/2-inch) strips.
  7. Place 1 bacon strip on each pastry strip. Twist the pastry and bacon together and place on the baking sheets, pressing down the ends.
  8. Bake for 15 minutes or until the pastries are golden brown and the bacon is crisp. Let the pastries cool on the baking sheets on wire racks for 5 minutes.

Grilled Tomato Tart


Just in time for this weekend's tailgate, I've got one of my favorites: Grilled Tomato Tart. I've shared it over at It's a Keeper as part of a {wonderful} Tailgating BBQ series!




Sweet tomatoes, creamy goat cheese, zesty herbs and crusty bread come together in this simple and tasty tart. You can make this on the grill or in your oven. Either way will be delicious!

Beer Pretzel Bread Bowls



Welcome to the Foodie Extravaganza!

This month the ingredient is pretzels with an optional ingredient of caramel.  Yes, October is National Pretzel Month along with a whole array of other delightful things!! Get excited!! I knew when this month's ingredient was announced, that I wanted to try beer pretzels. I've made soft pretzels before, shaped them into hearts and even made some delicious pretzel dogs. But beer and pretzels definitely go together. And what goes with beer and pretzels? That's right, cheese! So I filled the bowls with beer cheese soup {check back Friday for the recipe for that - you'll love it!}


Though the recipe sounds a bit complicated, it really isn't - and you really want that extra step of boiling the pretzel bowls in the baking soda water in order to get the perfect pretzel texture.


I loved the flavor of the beer in this pretzel bread.  I used a beer from a local brewery - Mother Earth's Cali Creamin' Vanilla Cream Ale, which added the perfect amount of malty flavor and just a hint of vanilla.  If you can get your hands on a bottle of this, you must try it.  This may be my new favorite!

Beer Pretzel Bread Bowls

Prep Time: 30 minutes plus about 1 1/2 hours to rise
Cook Time: 25 minutes
Ingredients (8 small bread bowls)
  • 1 1/2 wheat beer
  • 1 package dry active yeast
  • 2 tablespoons confectioners' sugar
  • 8 tablespoons butter, melted and divided
  • 1 1/4 teaspoons salt
  • 1 1/2 cups bread flour
  • 2 cups all-purpose flour
  • 2 cups very hot water
  • 2 tablespoons baking soda
  • Nonstick spray
  • Coarse sea salt
Instructions
  • In a large, non-reactive bowl, heat the beer in the microwave in 20 second increments until lukewarm, about 110 degrees.
  • Add the yeast, stir, and let it activate, about 3 minutes.
  • Next add the confectioners’ sugar and 4 tablespoons of the butter and stir to combine.
  • Sift together the salt, bread flour, and all-purpose flour. Add to the yeast mixture and knead for about 8-10 minutes, using either the hook attachment of a stand mixer or your hands.
  • Add the dough to a greased bowl and cover with plastic wrap and let it rise in a warm, moist environment until double in size, about 1 hour.
  • After the dough has risen, divide it into 8 equal portions. (I like to make 8 small bowls, holding about 1/3 cup of soup - you can make 4 larger bowls if you like) Form into balls and place on a lightly floured surface.
  • Cover balls with plastic wrap, allow to sit until doubled in size, about 20 mintes.
  • Preheat oven to 375.
  • Fill a large pot with water, making sure there is room for it bubble up without spilling over, but deep enough for the large dough balls. Bring water to a boil, add the baking soda. Cut an X into the top of each ball. Gently place one of the balls in the baking soda water and cook, turning once, for about 30 seconds. Remove from water and place on a baking sheet covered with a Silpat, or sprayed with cooking spray, cut side up. Repeat for all bread balls.
  • Brush liberally with melted butter, sprinkle with salt.
  • Bake at 375 for 25 minutes, or until a dark golden brown in color.
